Meemo's Bakery—so good, even Grandma is jealous!
I caught up with Meemo's Bakery owner Amber Palacios to get to know her and her team of cake artists and master bakers—and now I just want cupcakes. Take a look!
How did Meemo’s get its start? I started decorating cakes when my oldest son (who's now 36 years old) was turning one. I wanted something special for him and did not like what the grocery stores and bakeries had to offer. A trip to the craft store later, with tips, instruction books, and pans, the adventure began. Over the years, the demand for cakes was so high I was urged to open my own bakery. In 2011, Meemo’s Bakery was born. I named the bakery Meemo’s because this is the name my grandchildren call me and felt it was appropriate as the bakery’s slogan is: “It’s so good, even Grandma is jealous!”
What services do you offer San Antonio’s brides and grooms? We offer custom cake baking and decorating. We are a scratch bakery so we can make any flavor or style of cake. We do cakes, cupcakes, cookies, brownies, pies, and cheesecakes. We can customize your dessert table to your liking and to your budget. We want each couple to have the cake of their dreams and will work within a budget as much as is possible, making suggestions and giving ideas so our clients can be sure to serve everyone without breaking the bank.
What is your decorative style or approach to creating and designing wedding cakes? We are a custom bakery and want to give each couple a unique and creative cake that speaks of them. We will copy a picture if they like, and most do, but we get very excited when we get to do something out of the ordinary.
What’s your favorite part of your job? I love cake decorating. There is just something so rewarding when you can step back and say, “Hey, I made that!” When a customer is wowed, I am thrilled.
What makes cakes from Meemo’s Bakery unique and special? We bake totally from scratch. We don’t use any mixes, no shortening, no oil, no artificial flavors or ingredients. We make everything ourselves, all the way down to our caramel. We have a very talented team of designers who can make almost anything and it tastes good, too. We can do things with buttercream that most bakeries can only dream of doing with fondant. You have to taste it to believe it.
